Jambalaya Pasta

Yields for 6

1 tbsp of grapeseed oil 

1 onion small diced 

1 bell pepper small diced 

1red pepper small diced 

2 links of andouille sausage bias cut.

4 cloves of garlic minced 

2 boneless chicken breast cut into pieces 

2 tsp of Cajun seasoning 

2 tsp of Jerk seasoning 

1 can of diced tomatoes 

1 Chicken bouillon cube 

6 cups of heavy cream 

12 oz of Penne pasta 

1 cup of Cheddar cheese 

Salt and pepper to taste 

Grated Parmesan for serving 

Chopped parsley for serving 



  • In a large skillet over medium heat, heat oil. Add onion and peppers and cook until soft, then add sausages and cook until browned. Add garlic and cook until fragrant – 1 minute, then add chicken. Season with Cajun seasoning, jerk seasoning and salt & pepper, stirring often until chicken is golden and cooked thoroughly.  
  • Add penne and stir, then pour in diced tomatoes and chicken broth. Simmer until pasta is al dente (cooked so as to be still firm when bitten) and almost all liquid is absorbed – about 20 minutes. Stir in heavy cream and cheddar until melted. 
  • Serve with Parmesan and parsley.
